Coconut, Cardamom + Lime Chia Pudding

A simple make ahead breakfast, chia puddings are a great on-the-go snack as well. The flavour combinations are endless and this one is fresh and zingy with creamy coconut and great texture.

Ideally make this chia pud 24 hours ahead to let all of the flavours combine and the mix thicken. 

Coconut, Cardamom + Lime Chia Pudding 

3 tablespoons Chia Seeds 

1 cup Coconut milk 

The Juice and Zest of 1 Lime (about 1 tablespoon zest, 2 tablespoons juice) 

2 tablespoons Shredded Coconut

2 teaspoons Maple Syrup 

1/4 teaspoon Vanilla bean powder or 1 teaspoon Vanilla Extract

1/8 teaspoon of Cardamom

In a jar or container with a lid add chia seeds and coconut milk. Stir though juice, zest, coconut, vanilla and cardamom. Let sit for 5 minutes. Stir with a fork to evenly distribute chia and break up any lumps. 

Refrigerate for several hours or overnight. To serve stir and divide between two bowls or small jars and top with additional coconut, zest and and optionally fruit. 

I like pear and raspberries with this one!
