SUPERFOOD BREAKFAST CRUNCH CEREAL
I've given my original Five Minute Breakfast Crunch Cereal a makeover adding a few extra goodies to really kick it up a nutritional notch.
It's still gluten free, simple and quick to make and beats any store bought cereal on the shelf hands down!
My kids love to snack on this stuff so I thought why not fit in a bit more crunch and nutritional goodness by adding a serve of chia, hemp and Teff, my favourite little super grain.

SUPERFOOD BREAKFAST CRUNCH CEREAL
Pre-heat oven to 180Β° C and line a large baking sheet with parchment paper. I find a rimmed baking sheet to work best. Set aside.
In a large bowl combine...
- 1 cup Puffed Quinoa
- 1 cup Puffed Buckwheat
- 1 cup Cashews, roughly chopped*
- 1 cup Shredded Coconut
- 1/2 cup Hemp Seeds
- 1/4 cup Teff grain/seeds
- 2 tablespoons Chia Seeds
In a small pot on the stove combine and meltβ¦
- 1/4 cup liquid sweetner of choice like Rice Malt or Maple Syrup
- 1/2 cup Almond Butter*
- 3 tablespoons Coconut oil
- 1 teaspoon Vanilla extract
- Pinch of sea salt
Pour the wet mixture over the dry cereal mix.
Mix thorough, coating well.
Spread mix onto parchment lined baking sheet in one single layer.
Place in pre-heated oven and bake for 5 minutes until golden.
Remove from oven and stir/flip mixture pressing down again into a smooth layer if needed.
Bake for a further 3-5 minutes taking care not to burn.
Let cool completely on the baking sheet.
Break up mixture into clusters and store in an air tight container in the refrigerator for up to two weeks.
Enjoy with coconut yoghurt, nut milk or over a smoothie bowl.
*NOTES: For a nut free version omit the cashews and replace the almond butter with an equal amount of sunflower seed butter (sunbutter) or Tahini.
If you are missing an ingredient feel free to substitute your favourite nuts, seeds etc. simply keep the quantities the same.
