Happy St.Patricks Day Green Smoothie
Once upon a time I celebrated St.Patricks Day with green beer..... ohhhh those were the days! No actually just the thought of that makes me a bit green now ha! All that food dye! Eek! But a right of passage in Uni days really isn't it :)
These days I ring in the day (and most days) with a green smoothie.
This one is refreshing, light and almost like a juice but with a good dose of fiber from the zucchini and apple skins.
It's also a big hit with the kids. Hope you enjoy and cheers!
St. Paddy's Day Green Smoothie
INGREDIENTS
1/2 cup frozen Zucchini
1 small Cucumber, peeled
1 small Green Apple, halved, quartered and cut into small cubes, skin on (I use Fuji)
1/2 frozen Banana
1 large handful Iceberg Lettuce
Juice of half a Lemon
200mls Water
Optional: Fresh Mint, protein powder, collagen etc.
METHOD
Combine all ingredients in your Vitamix or high speed blender and blend until smooth and frothy. About 1 minute to really get that apple!
