Roasted Cauliflower Dip
ROASTED CAULIFLOWER DIP
A delicious depth of flavour and a great change up from your traditional everyday hummus!
I love this dip as a snack but also used on sandwiches and in wraps or as an accompaniment in a nourish bowl.
Roasting the cauliflower brings out so much flavour, you'll love this!
ROASTED CAULIFLOWER DIP
INGREDIENTS
1 small head Cauliflower, washed and trimmed
1 tablespoon Ghee, melted
1 teaspoon Smoked Paprika
1/2 teaspoon Garlic powder
1 teaspoon Cumin Seeds (optional)
Juice and Zest of one Lemon
1 teaspoon Sea salt
1/3 cup Avocado oil + 2 tablespoons*
Cracked Black pepper to taste
*NOTE: You can sub Extra Virgin Olive Oil, however this has a heavier flavour. You may want to begin with just a 1/4 cup and add as needed. You may also like to add additional lemon juice to taste.
METHOD
Pre-heat your oven to 220Β° Celsius
In a small bowl toss cauliflower florets in melted Ghee, paprika, garlic powder, fennel seeds and a sprinkle of salt and pepper.
Place in a roasting pan or on a baking sheet.
Roast for 20 minutes until tender and slightly charred.
Set aside to cool.
In your food processor or high speed blender like a Vitamix combine cooled cauliflower, lemon juice, zest, sea salt and 2 tablespoons avocado oil.
Blend on high speed until combined and broken down.
Slowly add avocado oil while processor is running until dip becomes smooth and loose. If needed you can add a bit of water or extra avocado oil until our desired consistency is reached.
Season with cracked pepper and additional salt or lemon to your taste.
Serve dip garnished Dukkah or toasted sesame seeds and serve with veggies, seed crackers and olives for an awesome snack plate!
