RAW LEMON SLICE
I love having a slice pre-made in the fridge for the week. It get's me through the 3pm slump, toddler meltdowns and snack attacks. Perfect with a cup of tea this little slice is sooo simple and a fresh zingy break from chocolate! Sorry chocolate...don't be mad. Enjoy x Ash
RAW LEMON SLICE
INGREDIENTS
1 cup Macadamia Nuts
1 cup Cashews
1 cup Shredded Coconut
2 tablespoons Coconut oil, melted
1 cup (10-12) Medjool dates, pitted and roughly chopped
Juice and Zest of 1 wax free Lemon (preferably organic, it really makes a difference here)
4-5 drops Lemon Essential Oil
1/2 teaspoon Vanilla Bean powder
1 tablespoon of Water
METHOD
Line a square cake pan with parchment paper and set aside.
Place macadamias and cashews in food processor and pulse 3 to 4 times. Add remaining ingredients, reserving water. Pulse until a crumb forms. Add water sa little bit at a time pulsing between adds until mix comes together and sticks when pressed between your thumb and forefinger.
Pour mix into lined cake tin and press firmly and evenly into tin. Set in the refrigerator for 1 hour. Slice to serve. Optional, grate additional lemon zest to serve.
