Raw Blackforest Slice
PLAN AHEAD: Soak 1 cup Macadamia nuts in filtered water for 3-4 hours. Line a shallow tin or baking dish with parchment paper I used a 6.5x10.5 tin.
Base Layer
1 Cup Pecans
1 Cup Shredded Coconut
1 Tbl Almond Milk
Combine pecans, coconut & dates in food processor. Pulse several times until a fine crumb forms. Slowly add almond milk pulsing until mixture is sticky & holds when pressed between your fingers. Press firmly into the base of tin with the back of a spatula or use a piece of parchment & press down with hands. Place in freezer to set.
Cream Layer
1 cup soaked Macadamias drained
ΒΌ cup shredded coconut
ΒΌ cup blanched almond meal (or for completely raw ΒΌ cup almonds that have been soaked overnight, this will affect the color of the cream layer)
1 Tbl Coconut cream
1 Tbl raw honey or rice malt syrup
Pinch of salt
Process all ingredients until creamy and smooth. Spread onto base layer. Return to freezer.
Cherry Layer
1 Β½ Cups of cherries (fresh or frozen)
Β½ cup shredded coconut
ΒΌ cup almond meal
1 Tbl coconut cream
1 Tbl coconut oil melted
One more time! Throw everything in your food processor, blitz until well combined.
Spread cherry layer onto cream layer and return to the fridge to set. If you had some Kirsch & you wanted to add it for the extra Blackforest flavor I would add it here. Maybe a Β½ tsp. Not 100% on how it would affect the mix as I didnβt have any to try out. Let me know if you give it a whirl!
To make raw choc topping. Just the standard ΒΌ cup coconut oil, ΒΌ cup Cacao melted on the stove, remove from heat and add 1 Tbl maple syrup & a pinch of sea salt. Pour on top of your slice & return to the freezer to set. Best if kept in the freezer. When ready to serve let sit for 5 minutes or so before consuming. Enjoy x
