Blueberry Chia Jam
Blueberry Chia Jam…so simple you can’t not make it! Here's a little weekend project for you! A simple chia jam so you can never, I repeat never, buy sugar laden store bought jam again!
This simple method can be applied to any friuit to make healthy paleo, vegan jam at home. Move over avocado the jams coming for ya!...not really we love you avo, there is room for you both!
Blueberry Chia Jam
1 ½ cups blueberries
1 Tablespoon lemon zest
1 Tablesppon lemon Juice
1 Tablespoon Maple Syrup
½ teaspoon vanilla extract
Pinch of black pepper (trust me)
In a small pot on the stove bring all ingredients to a boil, reduce to a simmer for 10 minutes stirring every 2 minutes or so.
Remove from the heat, add 1 ½ tablespoons of chia seeds (or ground chia if you prefer a smooth texture) stir through, transfer to glass jar or storage container.
Pop in the fridge to cool for at least 1-2 hours. Enjoy!
