Chocolate Cashew Raw Slice
SO QUICK! SO EASY! ... this baby gets me through the 3pm slump and keeps me from binge eating chocolate in the late afternoon. Even if it is 85% dark organic chocolate this slice it totally the better option to keep you fueled until dinner.
Comprised of just a few ingredients this comes together in your food processor in minutes and will last all week. A great slice to add to your meal prep routine!
CHOCOLATE CASHEW RAW SLICE
INGREDIENTS
1 cup Cashews
1 cup Desiccated coconut
1/4 cup Cacao
1 tablespoon Chia seeds or cacao nibs (optional)
2 tablespoons Maple syrup
1 tablespoon of Nut butter or Coconut oil
1 teaspoon Vanilla extract
pinch of Sea salt
METHOD
In your food processor combine all ingredients and processes until a sticky crumb forms. Press firmly and evenly into a dish or tin lined with parchment paper (depending on the size thickness will vary)
Let set in the fridge for 30 minutes. I keep mine stored in the refrigerator for up to a week. Enjoy x
Optional: For raw chocolate topping combine 1 tablespoon cacao powder, 1 tablespoon coconut oil and 1/2 tablespoon of maple syrup in a small bowl and microwave for 30 seconds or melt in a pot on the stove. Mix well, let cool slightly and drizzle with a fork over your slice. Let set in fridge or freezer.
