Banana + Mesquite Oatmeal
Its winter her in AUS, so it is time to get creative with our oatmeal combinations. I love adding superfoods to oatmeal. Mesquite is high in dietary fiber and protein. It also contains calcium, magnesium, potassium, iron, zinc, and the amino acid lysine. It is a delicious little powder that gives a caramel like flavor and is suitable for children from 10 months of age. Combined with banana and raisins this sweet caramel like porridge is a winner for both adults and children. Enjoy x
Single serve Banana + Mesquite Oatmeal
Β½ cup almond milk or choice of plantbased milk
ΒΌ tsp vanilla extract
ΒΌ tsp cinnamon
Pinch of sea salt
Heaped ΒΌ cup GF oats (labeled wheat-free in AUS)
1 teaspoon of raisins
Β½ ripe banana mashed (about thumb sized)
1 tablespoon Mesquite powder
Top withβ¦
6-8 almonds chopped (omit for nut free)
Shredded coconut
In a small pot combine milk, vanilla and cinnamon with a pinch of sea salt. Add oats and raisins and stir to combine. Bring to a boil and reduce heat cooking for approximately 3- 5 minutes until desired consistency is reached (based on if you prefer a thick or loose porridge) Stir through mashed banana and cook for a further minute. Remove from heat and stir through Mesquite powder. Top with almonds and coconut. Coconut yoghurt is nice here as well. Enjoy! x
