Paleo Chocolate Raspberry Muffins
Charlotte had a play date yesterday with her cousins. I have 4 beautiful nieces! How lucky am I. My son James is the first boy. How unlucky is he! Haha no, no heβs very lucky too but he has ended up with a floral headband on, and pink shoes more than once!
Iβve mentioned before about preparation being key to living a GF/Paleo lifestyle especially with kids. I always like to send something wherever Charlotte goes so there is a suitable snack option for her and enough to share with friends and family. So I made these chocolate raspberry Muffins.
I made them how I make all of my muffins. Same base, different flavors. This is a very versatile recipe you can turn into a thousand difference muffin combos! For example I use mashed banana, apple or pear. I use Maple syrup, honey or rice malt. I add cacao, LSA or protein powder. You can do anything if you just keep the liquid to dry ingredient measures the same. You can even make them vegan! Enjoy x
INGREDIENTS
2 cups blanched Almond Meal
1/2 cup Tapioca flour
1/2 cup cacao
1 1/2 tsp baking soda
Pinch of sea salt
3 tablespoons Coconut oil, room temperature
3 tablespoons Maple syrup
3 eggs (or flax eggs)
350g Apple Sauce*
2 teaspoons Almond milk
1 cup fresh or frozen Raspberries
METHOD
Mix first 5 dry ingredients in a bowl. In a seperate bowl add coconut oil and maple syrup. Using a hand mixer cream the coconut oil and maple syrup until pale.
Add the the eggs to your almond meal mix bowl and whisk them slightly before mixing them in fully.
Stir maple/coconut mix into almond meal.
Fold through apple sauce.
Slowly fold in your almond milk.
Finally fold through raspberries.
Scoop 3/4 of a large ice-cream scoop into each cup. Bake at 175Β°C for 12-14 minutes or when they spring back to the touch. If you make large muffins 2 extra minutes may be required just keep an eye on them.
This recipie makes 12 large muffins or 20 small muffins like those shown.
NOTE: You can use homemade applesauce or I purchase an Organic Apples only no added sugar brand from my local grocer for this recipe. You can replace apple sauce with mashed pear or banana as well.
