Honey Graham Cookies
Coconut Butter Honey Graham Cookies

Makes: 15 Cookies
These healthy Honey Graham Cookies are crisp around the edges, chewy in the centre and not too sweet. Just a hint of honey and macadamia, these cookies are just begging to made into ‘Smores or devoured for afternoon tea!

6 Medjool Dates
1/2 cup Coconut Butter I use H2G Organic Coconut Butter
2 tablespoon Almond Milk or milk of choice
1 1/4 cup Blanched Almond Meal
1 1/2 tablespoon Sorghum Flour* Paleo Option see note
1/2 cup whole Macadamia nuts
1/4 teaspoon Baking soda
1/8 teaspoon Sea Salt
2 tablespoons Raw Honey* Vegan Option see note
Pre-heat oven to 165°C Fan Forced (330°F)
Line a baking sheet with parchment paper and set aside.
In the bowl of your food processor add dates and coconut butter. Process until a crumb forms.
Slowly add almond milk with the machine running to form a smooth paste.
Scrape down sides of the bowl and add the remaining ingredients. Pulse several times to combine, scraping down the sides of the bowl if needed.
Pour dough out onto a floured surface or parchment paper and knead with damp hands once or twice, forming a ball of well mixed dough.
Using a rolling pin, roll dough into roughly an 8 x 8 square, 5cm thick. (Feel free to roll dough into any shape and thickness you would like. If you prefer a thinner or square Graham Cracker)
Using a pastry or pizza cutter and cut dough into 4 x 3 rows forming rectangles. Prick tops with a fork or cookie stamp if desired.
Carefully transfer cookies to baking sheet and bake for 12-14 minutes until golden around the edges.
Remove from oven and allow to cool slightly for 5 minutes on baking tray. Transfer cookies to a wire rack to cool completely. Enjoy with tea or use Honey Grahams to make ice cream sandwiches, or ‘smores!
*Note: For a vegan version simply replace honey with agave, rice malt or maple syrup.
For a Paleo Option replace Sorghum with 1 Tablespoon Coconut Flour
TO MAKE S'MORES
So this is such a traditional Canadian Summer indulgence, I think many countries enjoy s'mores but not all so just in case! If you haven't had a s'more this is a simple basic how-to.
Use prepared Honey Grahams. Top with squares of your favourite chocolate. Toast a good quality marshmallow over a fire until golden and place on top of chocolate to melt. Add another cookie on top to make a sandwich. Squish together and enjoy!
No fire nearby? Cheats method! Pop a cookie, a square of chocolate and a marshmallow on top into the microwave for 25 seconds. Remove and top with another Honey Graham! Squish together and enjoy the gooey goodness!
