Strawberry Almond Butter Cookies 🍓
Pre-heat oven to 175 degrees Celsius. Line a large baking tray with parchment paper and set aside.
In a large bowl combine…
¾ cup almond butter (store bought or homemade is fine)
1 egg lightly whisked or 1 pre-prepared flax egg for vegan option
2 tablespoons of maple syrup, honey or rice malt
1/3 tsp baking soda
Pinch of sea salt
Add ½ cup of chopped strawberries and fold through batter.Use a teaspoon or mini ice cream scoop to drop small balls of batter onto baking sheet leaving room for each cookie to spread slightly.
Bake in a pre-heated 175° C oven for approximately 7-8 minutes or until brown on top. Transfer to a wire rack to cool. Best when eaten same day. Any leftovers may be stored in the refrigerator for up to 2 days. Enjoy x
