Paleo Pancakes
Who doesn't love pancakes?! Well actually, me. I didn't. Traditional pancakes didn't do it for me pre-gluten free days. Heavy, nutrition-less and full of sugar, oil, & gluten, they hurt my tummy. No thanks!
Then while searching through GF and Paleo recipes I found a few (okay a million) banana and egg-white recipes that were light and yum! And so my own version was born.
These pack a serious nutritional punch and are suitable for the whole family!
Paleo Protein Pancakes

INGREDIENTS
275g ripe Banana (roughly 3 medium bananas)
1/2 cup Egg whites (or 3 whole free range eggs if you prefer)
1 teaspoon Vanilla Extract
1/2 teaspoon Cinnamon
4 tablespoons of Protein powder of choice*
2 teaspoons Chia seeds
2 teaspoons Flax seeds
1 teaspoon Almond milk ( I use an activated organic variety)
METHOD
In a large bowl mash banana well. Add egg whites, vanilla and cinnamon to mashed banana. Stir in protein*, chia, flax and almond milk. Let the batter sit for 5 minutes while the chia seeds work their magic! This makes for a slightly fluffy pancake.
Heat a frying pan on medium heat with a teaspoon of coconut oil.
I use a regular and a mini ice cream scoop for big and little cakes.
Flip when you see bubbles and cook for a further minute. Add more coconut oil as you go. Makes 8 big and 8 little cakes.
Top any way you'd like. I top with nut butter, coconut yogurt, toasted coconut or hemp seeds. Serve with fruit. Enjoy! x
*Note: I use a raw plant-based protein, but any protein you have at home will work. Just be sure it is suitable for children if sharing with your kiddos. You can sub 4 tablespoons of almond meal if you don't have protein powder but you may need to add up to a tablespoon of almond milk to loosen the batter. It should just pour.
