Paleo Apple Cinnamon Waffles
A classic flavor pairing these waffles are scrumptious and comforting. Filling the house with the sweet smell of cinnamon and toasted pecans just has weekend written all over it. These waffles are full of fiber, protein and are just plain delicious. Enjoy x
INGREDIENTS
1.5 cups Blanched Almond Meal/flour
ΒΌ cup Tapioca flour (cassava flour)
Β½ teaspoon Baking Powder
Pinch of Sea salt
1 tablespoon Cinnamon
2 Eggs
Β½ cup Egg whites
Β½ cup Apple Sauce
1 teaspoon Vanilla extract
1 cup Grated Apple
1/3 cup Almond Milk
METHOD
In a bowl mix almond flour, tapioca, baking powder, cinnamon and salt
In a separate small bowl whisk eggs, egg white, apple sauce, & vanilla.
Add wet to dry mix. Fold through grated apple. Slowly add almond milk folding and mixing in as you go.
Heat waffle maker. Recipe makes 8 x Β½ cup waffles.
MAPLE PECAN TOPPING
In a pan heat 1 Tbl coconut oil and 1 Tbl maple syrup
add ΒΌ cup pecans and toss to coat.
Heat and swirl for about 4-5 minutes on low heat. Let cool. Serve with waffles, coconut yoghurt and fruit.
