Puffed Buckwheat + Almond Butter Bars
Healthy Granola Bars
These are packed with good things, hemp seeds, chia, puffed buckwheat, almonds (whole and ground) almond butter, coconut, mesquite powder, coconut oil and rice malt. Some mixed spice, some vanilla β¦ yummy yummy! Perfect for pre/post gym, lunchbox or kiddos! Enjoy xx Ash
Puffed Buckwheat and Almond Butter Bars
1 Β½ cups Puffed Buckwheat
1 cup whole Almonds, lightly toasted in a dry pan
1 cup ground Almonds/almond meal
3/4 cup Shredded Coconut
ΒΌ cup Hemp seeds
2 tablespoons Chia seeds
1 tablespoon Mesquite powder (optional)
ΒΌ teaspoon mixed spice
ΒΌ teaspoon Baking soda
Pinch of Sea salt
3/4 cup Almond butter or nut butter of choice
Β½ cup Coconut oil
ΒΌ cup Rice malt syrup
1 teaspoon Vanilla extract
MEHTOD
Pre-heat oven to 165 degrees, line a 8 x 10 slice tin (or pan or your choice) with parchment and set aside.
In a large bowl combine all dry ingredients.
In a small pot on the stove melt the almond butter, coconut oil and rice malt syrup. Remove from heat and add vanilla.
Mix wet ingredients into dry. Spread mixture into tin, pressing down firmly and evenly. Bake for 7-8 minutes until slightly puffy and golden. Let cool completely.
Slice into 10 large or 15 small bars. Store in the refrigerator for up to a week. Enjoy x Ash
