Nut Free No-Bake Slice
Nut-free no-bake slice! Also gluten, dairy and refined sugar free this little guy is perfect for school lunch boxes!
A few of you had asked for a healthy school snack that was nut free. This slice is full of good things, pepitas, coconut, hemp seeds and made with sunflower butter. Sunflower seed butter, made as you would nut butter, is a great alternative for baking and spreading. These bars are naturally sweetened with a hint of maple syrup and a few raisins, this slice is sooo yummy! Enjoy! x
SUNBUTTER NO-BAKE SLICE
INGREDIENTS
1 cup Coconut meal (simply grind coconut flakes in a food processor for just a few seconds until a fine meal forms)
1 cup Pepita meal (grind pumpkin/pepita seeds for 3 or 4 pulses in a food processor until a slightly chunky meal forms)
1 cup Puffed quinoa
ΒΌ cup Hemp seeds (optional)
ΒΌ cup raisins (or dried fruit of choice)
2 tablespoons of Chia seeds (optional)
3 tablespoons Coconut oil
ΒΌ cup sunflower butter
ΒΌ cup Maple syrup
1 teaspoon vanilla extract
Pinch of sea salt
In a large bowl combine quinoa, pepita and coconut meals, hemp seeds, chia seeds and raisins.
In a small pot on the stove melt the sun-butter, coconut oil, maple syrup, vanilla extract and salt.
Add your melted mix to your dry bowl and stir well to coat. Press firmly into a slice tin lined with parchment paper and refrigerate several hours or overnight. Slice into squares or rectangles and enjoy. Best stored in the refrigerator in an airtight container for up to 1 week.
