I love to keep a few baked sweet potatoes in the fridge to eat through the week. These are great as a base for salads, as a side, stuffed or sliced. They even double as excellent baby food spooned right out of the skin for my 7 month old. What can't a sweet potato do!?
TO BAKE
Pre-heat your oven to 225 Degrees Celsius
Scrub your sweet potatoes, leaving the skin on. Prick with a fork here and there.
Place potatoes on a parchment lined baking sheet and bake for 45 minutes to 1 hour until you can pierce with a butter knife through to the center indicating they are cooked through.
