Grilled Corn Salsa π½ π±
INGREDIENTS
1 cob corn rubbed with Avo oil + BBQ'd until cooked + charred or grilled in a grill pan on the stove
1/2 of each red, yellow and orange bell pepper finely diced
2 teaspoons avocado oil
1-2 tablespoons finely chopped jarred jalapeΓ±os depending on your heat tolerance, Juice of 1 lime, a handful of cilantro chopped Salt + Pepper to taste
METHOD
Simply mix all ingredients in a medium bowl and eat it with a spoon! No, try to wait until dinner! This can be made a day ahead and gets better with a bit of time in the fridge. Enjoy xx
