Oat Blender Pancakes
What every weekend looks like in our house. These super simple blender pancakes coated in fresh fruit or coyo or lathered in almond butter. So simple, so delish!
I often pack these as a handy little car snack. They are also brilliant for toddlers and BLW.

INGREDIENTS
2 large ripe bananas
1 heaped cup wheat-free/GF Oats such as Bobβs Red Mills
2 free-range eggs
1/4 cup milk of choice
1 teaspoon vanilla
1 teaspoon cinnamon
Optional: 1 tablespoon chia seeds and/or flax seeds
Coconut oil for pan
METHOD
in your blender add oats and bananas and blend until smooth. Add eggs, milk, vanilla and cinnamon. Pulse to combine.
If using, stir in chia and flax seeds. Let batter sit for 3-5 minutes to thicken.
Heat a large pan or griddle to a medium heat and liberally grease with coconut oil.
Add tablespoon sized scoops of batter to the pan, 3-4 cakes at a time flipping when bubbles appear. Finished when each side is golden.
I scoop straight from my blender but you can transfer to a bowl and add chia and flax that way if you prefer but hey, who wants more dishes!
You can make larger pancakes or smaller. Whatever you prefer working through until the batter is gone.
Topping with fresh or thawed frozen fruits, nuts, seeds, toasted coconut, nut butter, coyo or maple syrup. They are really a blank canvas.
