Whole30 Approved Chia Breakfast Pudding

Can you, can't you? You can! Chia seeds are 100% Whole30 approved. This unsweetened basic recipe is the best base for fresh fruits and nuts for a simple snack or egg-alternative breakfast! 

Basic Chia Seed Pudding - Whole30 Compliant / Unsweetened 


1/4 cup Chia seeds 

1 cup Coconut milk (be sure to use 100% coconut milk or a variety that is unsweetened without non-compliant additives and preservatives)

1 teaspoon Vanilla bean powder or the yield of 1 vanilla bean 


Mix all ingredients in a jar or bowl and refrigerate. After 10 minutes Chia pudding will have begun to thicken. Stir or shake to distribute chia evenly. 

Refrigerate for a further hour or overnight.

Serve topped with berries, seeds anything your heart desires! 


Note: If you are not on a whole30 feel free to mix in up to 1 tablespoon of maple syrup, or honey to your chia pudding.
