Passionfruit Compote
I love the acidic, sweet and tangy flavour and texture of passionfruit. I have only discovered it in the last 5 years or so as it is very popular here in Australia but not in Canada where I grew up.
This is a slightly thicker version with no added sweeter that is so delicious as a topping for yoghurt, smoothie bowls, oatmeal, ice creamβ¦.pretty much anything! Enjoy xx
Passionfruit Compote
INGREDIENTS
The pulp of 3 ripe passionfruit
1/4 cup Coconut Water
3 teaspoons chia seeds ground or whole*
METHOD
In a small pot on the stove bring passionfruit pulp and coconut water to a boil. Reduce heat to a simmer and add chia seeds. Let cook for 2-3 minutes stirring occasionally. Remove from heat let cool. Transfer to a glass jar with lid. Store in the refrigerator for up to 1 week.
Note: Grind your chia seeds for a smooth texture to not detract from the passionfruit seeds or leave chia seeds whole for an extra crunch. Your preference!
