Quinoa + Black Bean Burgers
Quick, easy and nutritious this veggie burger does the trick lunch or dinner. I've topped mine with hummus, avocado, jalapeno kraut & Tabasco! Who loves spicyπ₯
Quinoa & Black Bean Burgers
1 (400g) can of black beans
1 Β½ cups of cooked quinoa
4-5 brown mushrooms
1 garlic clove
Β½ small yellow onion
1 large carrot
1 small zucchini
1 teaspoon nutritional yeast flakes
Β½ teaspoon dried basil
Β½ teaspoon garlic powder
Salt & ground pepper
1 Egg (or flax egg)
Β½ cup almond meal
In your food processor with blades attachment chop mushrooms, onion and garlic. Switch over to your grater blade and grate carrot and zucchini.
Add in beans and quinoa, egg and almond meal and pulse until well combined. Use a Β½ cup measuring cup to scoop 6 large and 4 kids mini burgers onto a parchment lined baking tray and bake for 20-25 minutes at 175 degrees. Enjoy!
