Bircher Muesli Overnight Oats
Bircher Muesli π²π... I love overnight oats! Oats are a blood sugar stabilizer, a slow-release carbohydrate that will keep you feeling full and happy for hours.They are easy, healthy and delicious! What's not to love. This overnight mix is the Bircher Muesli variety.
Bircher is soaked overnight in apple juice and yogurt, and has grated apple through it for a nice fresh taste and texture. It is so delicious! This is not exactly a traditional version, but kind of an evolution in our house of this Swiss breakfast.
You can make up a batch at the start of the week and it will keep (and only get tastier as the days go on) for 3-4 days in the fridge. It makes a great breakfast topped with fruit, nuts or everything! You can even keep it portioned in mason jars for a ready to run breakfast on the go. This recipe mix makes roughly 4-6 servings and even my toddler and husband love it!
Bircher Muesli Mix
3 cups GF organic Oats
Β½ cup almonds chopped
1/3 cup sunflower seeds
1/3 pumpkin seeds (pepitas)
ΒΌ cup dried cranberries
1 tbl Honey (or sweetner of choice)
1 cup shredded or desiccated coconut
2 tablespoons ground or whole flax seeds
1 Β½ tablespoons ground Cinnamon
1 medium green apple grated (plus more to serve)
1 cup fresh apple juice (juice of apples only, watch for added sugar) or almond milk
Β½ cup nondairy yoghurt like@coyo_is_coconuts
Note: You can add a protein powder to this mix to pump up the protein if you wish. Add 1/4 cup protein like@amazoniaco raw protein isolate to your dry mix. Simple add an extra 1/2 cup of liquid (almond milk or juice)
In a preheated 200 degree oven lightly toast your oats for 2-3 minutes until fragrant and golden. Set aside to cool. (You can skip this step if youβd like, it just adds a nice toasted flavor)
Combine all dry ingredients (I shop my organic pantry staples from@teamgoodness) in a large bowl. Add apple juice,honey, yoghurt and 1 grated green apple. Mix well and soak overnight. Serve topped with additional yoghurt and grated apple. Enjoy x
