Salted Maple Pecan + Pumpkin Crispy Rice Treats


These delicious crispy treats are perfect for Thanksgiving or Autumn with fall flavours like pumpkin a pecan. A festive take onto traditional rice crispy square the pumpkin lends a nice sweetness that screams fall. Enjoy x


3 tablespoons Coconut Oil 

2 tablespoons Maple Syrup 

1 tablespoon Almond butter 

1 teaspoon Vanilla extract 

1/2 cup Pumpkin puree/mash (fresh or canned)

3 cups Crisped Rice cereal 

1 cup marshmallows chopped or mini's 

1 cup Salted Maple Pecans* recipe below (reserve 1 tablespoon) 


Line a square baking or loaf tin dish with parchment paper. 

Place the first 5 ingredients in a small pot on the stove on a low heat. 

As mixture melts stir to combine. Remove from heat and let cool. 

In a large bowl combine rice cereal and marshmallows. 

Mix through cooled pumpkin mixture. Be sure to coat rice well. 

Fold through pecans. 

Pour mix into lined dish and press firmly and evenly into dish. 

OPTIONAL: Sprinkle the top with additional marshmallows and pecans. Press firmly into the top of slice with your hands to stick. 

Let set in the refrigerator for 1 hour or overnight. 

TO SERVE: Cut into squares to serve. 

Optional: Drizzle maple syrup and 

a pinch of sea salt. 

*To make Salted Maple Pecans

1 tablespoon Coconut oil 

1 tablespoon Maple syrup 

Pinch of Sea salt 

Roughly chop pecans and place in a small pan on the stove with maple syrup and coconut oil. Heat on a medium heat stirring the pan occasionally for 4-5 minutes until well coated and toasted. 

Remove from heat and sprinkle with sea salt. Let cool.
