Sweet Potato Waffles
Sometimes you just seriously want waffles! Waffles and maple syrup. Yep! I’m Canadian, I live for maple syrup!…Okay really that is totally a stereotype. Everyone lives for maple syrup!
These waffles use cooked sweet potato as a base and protein powder in place of flour. The ginger and vanilla lend well to the sweet potato making these waffles a total winner on both the nutrition and the flavor front!
INGREDIENTS
1 cup peeled, diced and cooked sweet potato (about 1 large potato)
1 cup egg whites
4 tablespoons protein powder of choice (optional)
1 tablespoon maple syrup
½ tsp vanilla
¼ tsp ground ginger
1 tablespoon flax seeds
1 tablespoon chia
1/2 tsp baking powder
¼ - ½ cup almond or coconut milk
METHOD
Place all ingredients (reserving the almond milk) in your food processor and process until smooth. Slowly add ¼ cup almond or coconut milk, adding up to ½ a cup of liquid (depending on whether or not you have used protein powder) to reach your desired consistency. Mix should be thick, but just pourable.
Heat your waffle maker and use about a 1/4 cup of mix per waffle. Makes 4 Belgian style waffles. Serve with coconut yoghurt. Enjoy, these are seriously tasty!
