Paleo Chocolate Cherry Glazed Donuts π
These are a healthy baked donut that are dairy, gluten and refined sugar free with a vegan option! Yummmmmmmmm
INGREDIENTS
2 cups almond meal
Β½ cup tapioca flour (cassava flour)
Β½ tsp baking powder
Pinch of sea salt
2 tablespoons maple syrup
2 tablespoons coconut oil
1 ΒΌ cup applesauce
3 Eggs (or pre-prepared flax eggs)
1 cup frozen cherries (or fresh) chopped
2 tablespoons chocolate chips I used a GF vegan organic 70% dark chip (you can omit for strict paleo)
METHOD
In a large bowl combine almond meal, tapioca, baking powder and sea salt
In a small bowl with hand mixer or spatula cream room temperature coconut oil and maple syrup.
Add wet to dry. Fold in applesauce. Add cherries and choc chips.
Bake in a pre-heated 175 degree oven for 12-15 minutes depending on your oven. Makes 24 mini donuts or 12 large muffins.
For the glaze...melt 3 tablespoons of coconut oil, 3 tablespoons of raw honey (or liquid sweetener of choice) and 2 Tablespoons of Ghee. Stir and melt on low heat on the stove top. Dip donuts immediately. Set aside to cool.
For Option Chocolate glaze melt 1 Β½ tablespoons choc chips and 1 Tablespoon coconut oil. Use a fork to drizzle onto cooled glazed donuts. Enjoy! x Ash
