3 Ingredient Freezer Fudge


Smooth and silky caramel with a crunchy pecan base, this delicious little treat is such a cinch. 3 ingredients and no fuss, it comes together within seconds in your Vitamix!

You you can make this freezer dessert ahead of time and have a slice ready and waiting for when the mood strikes or company comes. Enjoy!

3 Ingredient’ Caramel Pecan Freezer Fudge

TIME: 10 Minutes + Set time

MAKES: 8-12 Serves



  • 1 x 400ml can Full Fat Coconut Cream ( approx. 1 1/2 cups)
  • 16 Medjool Dates, pitted, soaked in boiling water for 5 minutes and drained
  • 1 cup Pecans


Line a 15cm square cake tin or small loaf pan with parchment paper and set aside.

In your high powered blender like a Vitamix or food processor, add Dates and Coconut Cream.

Turn machine on and slowly increasing speed.

Process at a medium speed scraping down the sides of the jug once if necessary) until smooth and creamy. About 30 seconds.

Pour Pecans into the bottom of your lined tin, arranging to cover the bottom of the tin well.

Pour prepared Caramel mixture over the top, spreading evenly with a spatula.  

Place in freezer to set for a minimum of 2 hours or overnight.

Best served directly from the freezer and enjoyed immediately.

Fudge will keep in the freezer in an airtight container for up to one month.


Feel free to use any nut of choice in place of pecans.

Add a few flakes of sea salt to each slice before serving to enhance the caramel flavour.
