Blueberry Coyo Treats
Raw Blueberry & Coconut Yoghurt Tarts
An easy mid-week treat that doesn't take much to put together, these little guys are packed full of goodness, delicious and good for you! Keep a batch in the freezer for snacks, after dinner or play dates!
Blueberry & Coyo Tarts π
INGREDIENTS
- 1 cup almonds
- Β½ cup shredded coconut
- 1 Tbl honey or maple or rice syrup
- 1 Β½ Tbl coconut oil melted
- 1 Tbl hemp seeds
- Β½ cup fresh or frozen blueberries
- 3/4 cup coconut yoghurt
METHOD
Combine 1st five ingredients in your food processor and blend until a sticky mix forms. Pulse through blueberries until just combined.
I use a mini ice cream scoop to transfer mix into a silicone mold roughly 1/2 full. Press mixture flat and pop Into the freezer for 15 minutes.
When they set use a spatula to fill the remainder of the cup with coconut yoghurt, smoothing the tops flat.
You can decorate the tops with coconut or cacao nibs for a special touch. Return to the freezer for 30 minutes or so.
Voila! Mini yummy yoghurt treats! Best eaten about 5-7 minutes out of the freezer (Extensive taste testing went into this specific timing π) Enjoy xx
