Paleo Chocolate Chip Cookies
These ooey gooey delicious cookies are so addictive, so easy and a total crowd pleaser. So quick to make youβll become addicted to whipping them up at the drop of a hat for last minute guests or an after school treat.
Paleo Chocolate Chip Cookies
1 cup (300g) almond butter. Store bought or homemade.
2 free range eggs lightly whisked or 2 pre-prepared flax eggs* see note
2 tablespoons maple syrup
1 1/2 teaspoons vanilla extract
1 1/4 teaspoons baking soda
Good pinch of sea salt (1/8 teaspoon)
1/2 cup chocolate chips or chopped chocolate I used Enjoylife brand 3 ingredient chocolate chunks here.
METHOD
Pre-heat oven to 165 degrees celsius (330 F) Line 2 baking trays with parchment paper and set aside .
In a medium bowl work nut butter with a fork making it smooth and loose. Add eggs, maple syrup, vanilla, baking soda and sea salt. Combine.
Fold through chocolate chips.
Drop tablespoon sized cookies onto baking sheet. Bake for 8-10 minutes until just firm to the touch.
Note: Cookies will not change shape and will not brown much or change colour. Be sure you are happy with the look and shape when you pop them in the oven.They will firm up as they cool. Best same day but will keep up to 3 days in the refrigerator.
Note: To make one flax egg mix 1 tablespoon of ground flax to 3 tablespoons of filtered water and let sit in the refrigerator for 30 minutes until thick and the consistency of egg white. Increase quantities depending on the number of eggs you wish to replace.
