Crunchy Granola Sweet
Crunchy Granola Sweet 🎶🎶.....Fact: I love Neil Diamond. Like I've been to his concert and I know every lyric of every song ever. I know totally embarrassing, forgive me haha....Anyyway he may say suite but I'm saying sweet as this granola is sticky, crunchy, and slightly sweet. It is awesome to snack on or have anytime of the day. Enjoy x
1 cup pecans
1 cup shredded coconut
1 cup dates
1/2 cup flaked almonds
1/2 cup flaked coconut
1/4 cup coconut oil
2 Tbl maple syrup
1 Tbl almond butter
1 Tbl vanilla extract
Pinch of sea salt
Pre-heat oven to 185 degrees and line a large baking sheet with parchment paper, set aside.
In your food processor pulse pecans, coconut and dates to a sticky crumb. Empty into a large bowl.
On the stove melt coconut oil, maple syrup, almond butter and vanilla. Let cool slightly and pour over nut mix. Then add flaked almonds and salt to your bowl mixing through.
Press and spread mix onto baking paper like you are icing a cake, making a thin layer of the mixture.
Bake for 10 minutes. Stir and flip mix gently, breaking into large clusters. Sprinkle coconut flakes on top and continue to bake for 1-2 minutes until flakes are golden. Let cool. Store in the fridge in an airtight container. Enjoy with yoghurt or milk of your choice! x
