Reishi + Chai Paleo Granola
Reishi + Chai Cashew Coconut Granola
Gluten, dairy and refined sugar free this paleo granola is a cinch! Using Naked Paleo Reishi + Chai Milk Infusion to incorporate not only lovely Chai flavour but also the amazing medicinal properties of the Reishi mushroom (more on that here it rocks!) If you're not in Australia feel free to use any chai spice blend you enjoy!
1 cup whole Cashews
1 cup shredded Coconut
7 Medjool Dates
1 tablespoon Naked Paleo Reishi + Chai Mylk Infusion *
1/4 cup coconut oil
2 tablespoons maple syrup
1 tablespoons almond butter
1 tablespoons vanilla extract
Pinch of sea salt
Pre-heat oven to 185° C and line a large baking sheet with parchment paper, set aside.
In your food processor pulse cashews, coconut and dates to a sticky crumb. Empty into a large bowl. Stir though the Reishi + Chai blend*and sea salt.
On the stove melt coconut oil, maple syrup, almond butter and vanilla. Let cool slightly and pour over nut mix and mix throughly.
Press and spread mix onto baking paper like you are icing a cake, making a thin layer of the mixture.
Bake for 10 minutes. Stir and flip mix gently, breaking into large clusters. Sprinkle coconut flakes on top and continue to bake for 1-2 minutes until flakes are golden. Let cool. Store in the fridge in an airtight container.
