The perfect make ahead dessert that is simple enough for the kids (or Dad) to whip up for Mum this Mothers Day!
This four ingredient mouse is light, fluffy and creamy but full of good things. Gluten, dairy and refined sugar free this paleo/vegan mousse is perfect for everyone!
NOTE: Use one cup of Mum’s favourite fruit in place of strawberries to give it your own twist.
DAIRY FREE 4 INGREDIENT STRAWBERRY MOUSSE
TIME: 5 minutes + 2 hours set time
- 2 tablespoons Flax Seeds (linseeds)
- 2 x 500ml cans full fat Coconut Cream
- 2 tablespoons liquid sweeter of choice ie. Honey, Rice Malt, Maple Syrup
- 1 cup Strawberries hulled
In your Vitamix or high speed blender add flax seeds. Blitz for 30 seconds at medium speed to turning flax into a fine flour.
Add coconut cream, sweeter and blend for 1 minute at high speed.
When mixture is well combined a thickening add strawberries and blend for a further minute.
Pour into serving glasses/jars and refrigerate for 2 hours or overnight to set.
Allow mousse to sit at room temperature for 10 minutes prior to serving.
