Orange, Vanilla + Pistachio Chia Pudding
Orange, Vanilla and Pistachio Chia Pudding with Cardamom
3 tablespoons Chia Seeds
1 cup Almond milk
The zest of 1 Navel Orange (about 1 tablespoon)
1/4 teaspoon Vanilla bean powder
1/8 teaspoon of Cardamom
1/8 teaspoon of Mixed spice
1-2 tablespoon Pistachios chopped
In a jar with a lid add chia seeds and almond milk. Stir though zest, vanilla and spices. Let sit for 5 minutes. Stir with a fork to evenly distribute chia and break up any lumps.
Refrigerate for several hours or overnight. To serve stir through chopped pistachios and divide between two bowls or small jars and top with additional pistachios and optionally fruit.
I liked strawberries but orange segments would be delicious as well.
