Beet Breakfast Donuts + Cashew Icing

BEET BREAKFAST DONUTS

Did I have you at Donut? 

These Breakfast Donuts with Cashew Butter Frosting (dyed with beet juice) are actually a sneaky baby led weaning recipe for my son James although I'm sure anyone would enjoy them. Charlotte definitely did! 

Made with Beet, Carrot and Zucchini, sweetened with Banana, I've used Teff flour for this nutrient packed recipe making it just the thing for little hands! 
You'll be happy for the whole family to have a donut for breakfast with these guys.

BEET BREAKFAST DONUTS 

INGREDIENTS 

2 medium Carrots, peeled 

1 medium Zucchini, trimmed

1 large Beet, peeled

3 medium Bananas (approximately 550g) 

1 1/4 cups Teff flour* 

1/4 cup Tapioca flour (cassava flour) 

4 Medjool Dates (Optional, added sweeties for adult palate. Omit for children under 12 month’s) 

3 free-range Eggs (or prepared flax eggs) 

1 1/2 teaspoons Baking Soda 

1/8 teaspoon of Sea salt 

1 teaspoon of Vanilla bean powder or extract 

METHOD 

Preheat your oven to 170° Celsius. Grease 2 12 hole mini donut tins or line a 12 hole muffin tin with large muffin liners. 

In your food processor fitted with a grating blade, grate carrot, zucchini and beet.

Leaving veggies in the bowl, change the fitting to your processing blade. Add dates (if using) and bananas. Process for 20-30 seconds until well combined and smooth. 

Add Teff,Tapioca, vanilla, baking soda and salt. Pulse two or three times until combined. 

Add eggs one at a time pulsing once or twice between adds. 

Scrape sides of bowl and be sure all ingredients are mixed well. 

Using a medium ice cream scoop or tablespoon, fill donut wells or muffin lines 3/4 full. 

Bake for 30 -35 minutes or until donuts spring back to the touch. 

CASHEW BUTTER FROSTING

1/2 cup Cashew Butter 

juice of half a lemon 

To make icing pink add 1 tablespoon of beet juice 

Optional: 1 Tablespoon Maple Syrup 

METHOD:With a fork or electric beaters mix all ingredients until fluffy and smooth, use to ice donuts! Enjoy x 

*NOTE: You can replace Teff flour with Oat, Almond or Buckwheat flour. Whatever you have on hand!
