Carrot+ Micro Greens Salad
A summer side dish that screams eat the rainbow!
Organic Rainbow Carrot Salad with Spicy micro greens, Sriracha sunflower kernels and yoghurt dressing ....or simply... YUM!
1 x 340g bag of Cal-Organics mini rainbow carrots (or carrots of your choice)
1 x 75 g package of Spicy Mix Microgreens (I used Ontario grown Greenbelt brand organic micro greens)
Note:If you can't source micro greens You can use arugula/rocket lettuce for the peppery spicy flavor and any sprouts you can source.
1 x bag of 365 Wholefoods brand Limited edition Sriracha sunflower kernels or seeds of choice
Parboil or steam your carrots for 5-7 minutes and set aside cool. You want them to still be slightly firm with a little crunch left. Once cool, toss with greens and sunflower seeds. Plate and top with dressing.
Simple yoghurt Dressing
1/2 cup grass fed whole milk yoghurt or Coconut yoghurt such as Coyo or Yoso
1 tablespoon hot sauce, tabasco or sweet chili sauce (optional)
Juice of 1 lemon or lime
Salt & Pepper to taste
For the dressing. Mix yoghurt and hot sauce . Season with salt & pepper. When ready to serve sprinkle sparingly over salad and squeeze with lemon/lime juice and enjoy x
