Pear + Lime Mini Loaves
Pear and Lime Mini loaves 🍐🍃
...these zesty little guys are perfect for spring and Easter brunch menus. They are sooo good I can stop eating them 🙈 As always they are GF, dairy free and can easily be made vegan.
2 cups Blanched almond meal
1/2 cup Tapioca flour
1 1/2 teaspoon Baking soda
Pinch of sea salt
Zest of 2 limes lots of zest! More if your zesty 😄
3 tablespoon Coconut oil
2 tablespoons Honey (or maple syrup, or rice malt)
1 teaspoon Vanilla extract
3 Free-range Eggs (or 3 pre-prepared flax eggs)
1 1/4 cup mashed Pear (approx 350g)
2 tablespoons Lime juice
Mix first 5 dry ingredients in a bowl. Add lemon zest. In a seperate bowl add coconut oil and honey. Using a hand mixer or lots of muscle cream the coconut oil and honey until pale and fluffy.
Add the the eggs to your almond meal mix whisking them slightly before mixing in fully.
Add honey/coconut mix into almond mix and stir in well.
Fold mashed pear, vanilla and Lime juice into your almond meal batter. It will puff up from the citrus and baking soda don't wory you can't really over mix. Make sure everything is well incorporated.
Scoop 3/4 of a large ice-cream scoop into each well of a mini loaf pan.
Top with thinly cut limes or pear slices.
Bake at 175° degrees for 15 mins or when they spring back to the touch.
This recipie makes 8 mini loaves and 4 bonus muffins (I only have one mini loaf pan) or 12 large muffins. For large muffins bake for approx.20 minutes.
